Individual BBQ chicken pizzas

It's BBQ season and this tasty recipe is sure to be a hit

15 mins preparation | 25 mins cooking | Serves 4



  • 1 quantity pizza dough, quartered
  • olive oil spray
  • 2/3 cup barbecue sauce
  • 1½ cup mozzarella
  • ½ cooked barbecue chicken, meat removed and chopped roughly
  • ½ Spanish onion, sliced finely
  • 180g creamy smoked cheese, crumbled
  • 40g baby rocket leaves


  1. Preheat oven to 230°C/210°C fan-forced. On a lightly floured surface, roll out 4 balls of dough into rustic rectangles. Lightly spray trays with oil and place 2 bases on each tray.
  2. Spread barbecue sauce over each pizza base, leaving 1cm border. Sprinkle bases evenly with mozzarella, then scatter over chicken, smoked cheese and onion.
  3. Cook for 25 mins until bases are cooked and cheese is golden.
  4. Remove from oven, scatter with rocket, and serve immediately.
