Flour tortilla crisps recipe

Mexican -Feast -recipe

Serves 6

A Mexican feast is not complete without something crisp, golden and deep fried! These crisps are so easy to make and are a real crowd pleaser. You will never have enough to satisfy as these little morsels are addictive.

Ingredients

  • 1 1/3 cup milk
  • 3 Tbsp canola oil
  • 3 cups all purpose flour
  • 2 tsp baking powder
  • 2 tsp salt
  • 4 cups canola oil
  • Flakey sea salt

Method

  1. Pour milk and 3 Tbsp oil into a small saucepan and heat until warm.
  2. Mix flour, baking powder and salt into a bowl and pour the heated milk on top.
  3. Mix together with your hands to form a dough.
  4. Knead dough for 3-4 minutes.
  5. Cover with plastic wrap and rest for at least 15 minutes.
  6. Divide dough into 12 even portions.
  7. On a lightly floured surface roll out each portion into circles as thinly as possible with a rolling pin.
  8. Cut into triangles, you determine the size.
  9. Pour 4 cups canola oil into a heavy based saucepan and place on medium heat.
  10. Heat to 170 degrees or until a piece of bread becomes golden in a minute.
  11. Add tortillas in batches and cook until golden, turning as needed. They should only take 2-3 minutes to cook.
  12. Drain on paper towels, seasoning with salt.
