Prawn mango snow pea salad

Prawn -mango -salad

Serves 4

Plant snow peas in your garden in late October and you will benefit from harvesting sweet, crisp deliciousness all through summer. There is nothing more satisfying than picking produce straight from your garden and onto the plate...you can taste the sunshine!

This salad uses sambal oelak which is basically a ground chilli sambal which adds an Asian twist to the dish. No dressing is required as the cooking juices and limes bring all the flavours together. It is easier to eat if you take the tails off the prawns but we always keep the tails on 2-3 prawns per person for presentation.

Ingredients

  • 2 Tbsp canola oil
  • ½ large red onion thinly sliced
  • 2cm piece of ginger, peeled and thinly sliced
  • 2-3 tsp sambal oelek
  • 450g raw prawns, deveined and tails removed
  • Juice of 3 limes
  • 1 red chilli, seeded and chopped finely
  • Salt and pepper
  • 120 g snow peas, sliced length ways
  • 1 ripe mango, peeled and julienned

Method

  1. In a wok heat the oil and add the onion and ginger. Saute for 3 minutes until onion is transparent.
  2. Add sambal oelek and prawns and cook for a further 3 minutes or until prawns are cooked.
  3. Deglaze pan with lime juice and add chilli.
  4. Take off heat and set aside to cool slightly, season.
  5. In a large serving bowl add prawn mixture, snow peas and mango.
  6. Toss gently together and serve.
