Cheesy Campfire Potatoes

Once you’ve tried these, you’ll be making them as often as you can! Ready in 30-50 minutes (depending on campfire/bbq heat). 

SERVES 4

INGREDIENTS

  • 1kg small potatoes, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh herbs (oregano, thyme, rosemary – whatever you have)
  • Salt & freshly-ground black pepper
  • 130g tasty cheese, grated
  • 130g mozzarella, grated
  • Chilli flakes, to garnish

METHOD

  1. Heat barbecue to medium heat.
  2. Cut 4 large pieces of foil (about 30cm long).
  3. In a large bowl, toss potatoes in oil, garlic powder, herbs and salt and pepper. Divide evenly between foil pieces and seal each foil packet so potatoes are completely covered.
  4. Place foil packets on the barbecue and cook until potatoes are almost soft (around 15 minutes).
  5. Open packets, and sprinkle cheese evenly between each packet. Close packets again and cook until cheese is melted (about 5 minutes). 
  6. Top with a little more salt and pepper and chilli flakes to serve.
