BBQ steak sandwich with honey onions recipe

Ingredients

  • 2 tablespoon olive oil
  • 3 medium-sized onions, sliced
  • 2 tablespoon honey
  • 2 tablespoon balsamic vinegar
  • salt and freshly ground black pepper
  • 4 x 120g lean beef steaks, such as sirloin or rump
  • olive oil
  • salt and freshly ground black pepper
  • 8 thick slices wholegrain bread
  • baby spinach leaves, to garnish

Method

  1. Heat oil in a saucepan, add onions and cook over a medium-low heat for 10 minutes until softened but not coloured.
  2. Add the honey and balsamic vinegar and cook for 10 minutes more, stirring often until caramelised. Season the onions with salt and pepper and remove to cool.
  3. Heat a barbecue on high. Brush steaks with oil and season on both sides with salt and pepper. Barbecue steaks for 2 to 3 minutes on each side or until cooked to your liking. Set aside steaks to rest for 5 minutes and keep warm.
  4. Place each steak on a slice of bread and top with a good dollop of honey onions and a few spinach leaves. Top with remaining slices of bread.
