Muffin pizza slice

Celebrate picnic season with this tasty recipe

  • 1 cup self-raising flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup grated tasty cheese
  • 1 teaspoon dried oregano leaves
  • 1 egg
  • ½ cup milk
  • 60g butter, melted
  • 2 x 50g sachets pizza sauce
  • ½ medium red capsicum, chopped finely
  • 1 stick (100g) cabanossi, sliced thinly
  • 12 pitted kalamata olives
  • 1/3 cup grated tasty cheese, extra


  1. Preheat oven to 200°C (180°C fan-forced). Grease and line a 30cm x 20cm (base measurement) slice pan, extending paper over long sides.
  2. Sift flour, baking powder and salt in a medium bowl. Add cheese and oregano. Make a well in the centre of mixture. Whisk egg, milk and butter in a small jug; pour into flour mixture. Using a large spoon, gently fold together until just combined. Spread into prepared pan.
  3. Cover top of muffin mixture with pizza sauce. Top with capsicum, cabanossi, olives and extra cheese. Bake for 20 to 25 minutes or until golden.
  4. Stand in pan for 5 minutes, then turn, top side up, onto a wire rack to cool. Cut into slices to serve.


  • Top with any of your favourite toppings — pineapple, salami, ham, artichokes or cherry tomatoes.
