How to make oyster shooters

Makes one dozen

A cross between a cocktail and an entree, these have a lil’ fiery kick with the decadent addition of your favourite oyster. When making the bloody mary mix, make sure it is well chilled before making the shooters. These little beauties are a great way to kick off a dinner party or are the perfect answer to a much needed Sunday morning kick start. Leave out the vodka if you are feeling virtuous.

Ingredients

  • 500ml tomato juice
  • 2 tsp chipotle hot sauce
  • 1 tsp worcestershire sauce
  • 1 tsp horseradish paste
  • ¼ tsp smoked paprika
  • ½ tsp flaky sea salt
  • Juice of 1 lemon
  • Juice of 1 lime
  • 90ml vodka
  • Periperi salt
  • 12 fresh oysters

Method

  1. In a large pitcher, mix first nine ingredients well. Set aside in fridge to chill until ready to use.
  2. Using the juicy side of a lemon or lime, rub along the lip of one dozen shot glasses. Roll the edge of the glass in Periperi salt.
  3. In each shot glass, place one raw oyster.
  4. Top the shot glass with the bloody mary mix.
