Garlic and fennel flatbreads

Flatbreads

Serves 6 as nibbles

There is not much to say about this gorgeous dish except yum! The smell of these cooking alone will entice a gathering of hungry people nagging you asking how long until we can eat it. They will be gone as fast as you can serve them. These flatbreads are great as a afternoon snack, a pre-dinner nibble, or a late night munch.

Ingredients

  • 4 cloves garlic, finely chopped
  • 2 tsp fennel seeds
  • ⅓ cup good quality olive oil
  • 4 pita breads, halved horizontally
  • 50g shaved parmesan
  • Your choice of freshly chopped herbs to serve (optional)

Method

  1. Turn oven to 180°C.
  2. Mix together garlic, fennel seeds and olive oil.
  3. Slice pita breads in half horizontally and place on a flat oven tray.
  4. Evenly spread and drizzle the olive oil mix on top of the breads.
  5. Top the pitas with the shaved parmesan.
  6. Bake for 18-20 minutes until golden.
  7. Remove from oven and randomly chop.
  8. Sprinkle with fresh herbs.
  9. Demolish.
