Ch’i cucumber and gin spritzer

As we are not far away from summer, these warmer days beg for a refreshing drink in the sun. Ch’i is a sparkling herbal refresher and includes fo-ti, ginseng, aloe, gotu kola, and ginger in a herb blend. Ch’i makes a great base to cocktails and helps with that fresh, less sweet, summer cocktail feel. And best of all, it’s made in NZ.

This recipe is for individual glass servings, but feel free to combine four times the ingredients in a one-litre pitcher to share with family and friends.

Ingredients

  • 6 fresh mint leaves
  • 4-6 slices cucumber
  • Ice
  • Juice of half a lime
  • 30ml gin of your choice
  • Ch’i to fill

Method

  1. Roll mint leaves in the palms of your hands to help release flavour.
  2. In a tall glass place mint leaves, cucumber and fill to the top with ice.
  3. Squeeze in lime juice and 30ml gin.
  4. Top with Ch’i and stir to combine.
